Maybe it was the recent trip to Lavender by the Bay, but either way, I’m pretty sure my obsession with this potent little flower started a while ago.
Not gonna lie, I used to hate the smell of it. It smelled, I don’t know- “old” and too potpourri-like to me. But man oh man have my eyes been opened to all the possibilities this versatile plant has!
As if we needed more reasons to love the summer, about a year ago I tried my first lavender lemonade (compliments of the Bean Tree Cafe which is now a convenient drive from home for me 😉 ) Needless to say- my world was rocked! From then on, it’s become one of my favorite signs of summer. It’s just the right amount of flowery that I can get into without feeling like I licked my grandmas potpourri bowl, ya know what I mean?
Hence, I would like to share with you three flavors of summer I’m absolutely loving this season:
1. Lavender Lemonade. Duh. Didn’t we just go through this? Repetitive- sorry! But seriously- after much Pinterest scrolling I found an awesome recipe that has become my golden standard when brewing this stuff. It’s super easy and finding it with coconut was the perfect touch it needed. Click here to check out the recipe and get sippin!
*Little tip: I also like a pump of blackberry in mine as well- adds a little extra tartness that meshes really well. Give it a try and let me know what you think! Also- be sure to set aside a day for making the lemonade. Like tea, the lemonade needs an overnight to steep the lavender and take its flavor. So if your looking for a party punch in a pinch- so sorry! This beautiful beverage needs an overnight in the fridge!
2. Watermelon Salad. Ahhh watermelon. Summers favorite fruit. Tastes like backyard BBQ, church picnics, Fourth of July and the beach. For the last couple years, my mom has found a ton of ways to adapt this delicious melon into so many cool recipes- and now, every summer I look forward to watermelon salad. It’s kind of a salty/sweet take, and super perfect for all my fellow salad lovers looking to spice things up this summer.
It’s this simple: cube some watermelon, pluck some fresh mint (compliments of Karen’s garden), crumble some feta, and my personal favorite- drizzle some balsamic glaze on top. Regular balsamic works great too! Just be careful to not over dress it since the watermelon sponges up any liquids really quickly! Lastly, toss together in a bowl and bam! You’ve got the perfect side dish for summer nights on the patio.
3. Gelato Bowls. My big sis recently asked me if I was salty or sweet. Now, while I definitely think I lean more towards the sweet side (I mean, cmon’- cupcakes amirite??) I would have to say any salty/sweet combination makes my favorite type of snack. Chocolate covered pretzels, salted caramel, cinnamon popcorn, sea salt dark chocolate, fries dipped in milkshakes- you get my drift. With that being said- I’m pretty sure my favorite salty/sweet combination is becoming coconut, almond dark chocolate anything and everything. All day. Everyday. Always in the mood. It’s go time.
Not to mention- my Italian genes make anything starting with “gel” and ending in “ato” to cause my heart skip a little beat haha…I have a problem.
But during my fun friend week this summer, naturally Lexington and I got to the dessert making. We experimented with that trendy balloon popping chocolate bowl thing and to our surprise- IT WORKED! Like a charm! Thankfully Lexi’s recent obsession with making chocolate covered pretzel sticks for every occasion left us with plenty of chocolate melts and sprinkles to go to town.
The concept is this:
Blow up a balloon.
Dip said balloon in melted chocolate.
Place chocolate covered balloons in the freezer on some wax paper.
Allow chocolate to harden.
Pop the balloon.
Gently peel the balloon remains out of the frozen chocolate shell.
Enjoy your chocolate bowl!
It was almost too fun and easy to be true! Until we scooped some Talenti Coconut Almond Dark Chocolate into it of course.
