Considering my first attempt at baking macaroons was a flop, I figured “if at first you don’t succeed, buy a silicone mat”
While cannoli macaroons were definitely ambitious, I didn’t exactly tone it back with the next batch but fortunately, it proved way more successful. Cookies & Cream macs turned out to be slightly complicated but totally worth it.
I would have to say the trickiest part was separating the Oreo cream from the cookie and getting those amounts correct. However, besides that, the basic steps are the same for any macaroon. Confectionery sugar and lots of love with the hand mixer!
I was not able to find the chocolate liquor that this recipe calls for, so I took the risk of leaving it out and it turned out just fine! Also- if you haven’t already and are hoping to become a macaroon hobbyist like myself- do yourself a favor and invest in a good silicone mat. The one I use was from Bed, Bath & Beyond for $14 and has worked magiccc for my macaroons. It saves you time, hassle, and protects your little baked treats from the fate that my poor Cannoli batch suffered. RIP.
