So, I’m pretty sure if you were to cut me open right now I would be full of these amazing pumpkin chocolate chip cookies- dead serious. I CANNOT STRESS THIS ENOUGH- they were the BEST pumpkin cookies I have EVER eaten. Truly something only worth experiencing for yourself. They are that indescribable.
Shoutout to my roomie who found this outstanding Pinterest recipe- and I think it’s pretty safe to say that we have had a steady supply in the #CornerHouse at all times since then.
My favorite part is the gooey, cakey, lick-your-fingers kind of consistency that these cookies take. Kind of interesting, but they sort of- (I hate this word but there’s legit no avoiding it)- moisten up overnight. So don’t be afraid if they don’t come out of the oven looking all gooey and with that slight pumpkin sheen right away. My guess is that just like a fresh baked pumpkin pie, these cookies might make them look more dry when they come out of the oven, but after a quick overnight they will set into that nice shine.
Some pro-tips with the recipe I used here:
1. The recipe calls for a pretty hefty amount of chocolate chips, but my friend- I went ahead and tested this for you- DO the full two cups. Totally makes the biggest difference! So does the brand of chips. Nestle or any other name brand chocolate chips have a noticeable difference in taste and texture than the off brand ones. I’m all for saving a buck, but trust me- you’ll want to make the splurge on the chocolate if anything. I mean, makes sense right? Priorities.
2. Secondly, the step in the above recipe where it says to mix the baking soda and teaspoon of milk in a separate bowl- I just mix them right in one of my tiny measuring cups that I used. It’s such a minuscule bit to mix so I’ve done it every time and haven’t had any problems!
3. Sift the dry ingredients. I know the recipe says to just mix it, and I’m not trying to make your life harder, but I have gotten into the habit of always assuming that sifting is better (because it is!). It helps to make for a much more consistent and doughy texture I feel.
